Valley fish (sea bream-sea bass-mullet)

It comes from integrated semi-intensive fish farming, with traditional methods and with a maximum density of 200 grams of fish per square metre.

Serra Fish

The Serra Fish (Pomatomus Saltatrix) is gray in color with greenish highlights, its fins are dark and it has a silver spot on its belly, and its snout has gold highlights. It has sharp teeth, which is why it is identified as an excellent predator. Weight and size are important, as they can reach over ten kilograms in weight and one meter in length.

Mixed frying of fish, del Golfo and small di laguna or de minudaia

Mixed frying of fish "del Golfo" and small "di laguna" or "de minudaia", differs depending on where it is tasted and the type of fish that is used. Normally the mixed frying of fish includes, in addition to the inevitable scampi and calamaretti, also sardines, anchovies (sardoni) and sometimes larger pieces of fish (mackerel, flounder, mullet, etc.). The small fry is composed of small "lagoon" small fishes, in Trieste it is composed only of a type of small fishes, the anguelle or acquadelle (latterini) and of grey shrimps or schile, called frying "de minudaia".
