De gusto in Promomare - Show Cooking: 'Introducing the Serra'

For this edition, De gusto, in collaboration with the I.S.I.S. A. Pertini Hotel Management School in Grado and Monfalcone, will present two show cooking followed by a tasting in the indoor dining area of the new “PORTICCIOLO Lounge Bar and Bistrot”. A wine pairing will be offered to complement the tasting

“Poached Bluefish in court-bouillon served on mixed sweet-and-sour green asparagus with a citrus Hollandaise sauce”

Bluefish is now considered a species permanently present in the Mediterranean Sea, although technically it is not a historically native species of our waters. From a gastronomic perspective, it is a fish of outstanding quality. In recent years, it has been increasingly appreciated because it is:

  • sustainable compared to more heavily exploited species
  • affordable yet highly valued in cuisine
  • versatile in modern culinary preparations

To accompany the tasting of the dish, a glass of “LibeAmour Ribolla Gialla spumantizzata - Villa Russiz Capriva del Friulisparkling white wine will be served

Reservations are REQUIRED - maximum 30 people - and entitle you to a seat and a tasting at the end
