Vinification: whole-grape pressing at low pressure, cold decanted free-run must with first fermentation in steel at controlled temperature. After 6 months of stabilisation, followed by prise de mousse in autoclave (Martinotti Charmat method) with inoculation of selected yeasts
Maturation: on the lees for at least 18 months
Alcohol content: 12.5 %.
Serving temperature: 6° C - 8 °C
Tasting notes: fresh and structured sparkling wine. Fine on the nose. With hints of fresh white fruit, fresh white flowers, bread crust and mineral note. Good correspondence between nose and mouth, where the entry is firm. With good persistence, the delicate bubble gives a creamy sensation to the palate, which remains clean after drinking.
Perfect as an aperitif, its marked freshness makes it an ideal accompaniment to fish dishes, especially shellfish, lightly spiced cold meats and delicate meat dishes. It also goes well with fresh and medium-aged cheeses.
 
WHITE wine,
with a more or less intense straw yellow color. If sparkling, its froth is fine and evanescent. Its smell is fruity. Its taste is dry or sweet, lively, full-bodied, harmonious, rightly tannic and acid, calm. Its minimum total alcoholic strength by volume is 10.50% vol.
It should be served at a temperature of 8-10 ° C.
