Chestnut honey is derived from the nectar of Castanea sativa. Due to its high fructose content, it remains liquid for a long time; it has a more or less dark amber colour. The purer it is, the lighter amber it is; it takes on darker hues when mixed with the honeydew produced on the same plant by aphids. It has a smell reminiscent of Marseille soap and an initially sweet taste, with a note of mint soon turning into a persistent bitter aftertaste.
