The Friulian Lagoon wildflower honey derives from the nectar of numerous herbaceous, shrubby, and arboreal plants, often halophile or psammophilous, growing in the Friulian lagoon and in the surrounding areas. The colour differs depending on the period of collection of the nectar by the bees and the collection areas; it has usually an intense amber colour, sometimes with reddish reflections. Crystallisation is generally absent, although sometimes the honey takes on a viscous consistency or crystallises if it mainly derives from the nectar of Cakile maritima. Its aroma has a medium intensity and is slightly spicy and fruity; its flavour is quite intense, with bitter and mineral notes.
