Wildflower honey is a honey that comes from the nectar of an unspecified multitude of flowers, encompassing the floral variety of the area in which it is produced therefore, it can have a different flavour and colour, depending on the place and time of harvesting. Despite being a great classic, millefiori honey is always a pleasant discovery. It tends to be sweet and is much appreciated by children, crystallisation is rather quick and the harvest period extends from May to July.

If produced in the first part of spring, it tends to be light in colour and solid (crystallised), due to the strong contribution given by the dandelion nectar (Taraxacum officinale); when it is produced in the first half of summer, it appears light amber and liquid, due to the addition of acacia nectar (Robinia pseudoacacia). If produced from July onwards, it is liquid and with a more or less dark amber colour, due to the contribution of metcalfa honeydew (Metcalfa pruinosa).
In general, spring wildflower honeys have a more delicate smell and taste than summer honeys.
