Description

The Porzina (in dialect triestine) or Porcina is the meat of the pork ossocollo that is boiled in "Caldaia" and served either with the boiled mixture or as a filling of the classic "rosetta" (sandwich triestine). The type of meat that characterizes this typical dish is the cup or shoulder (the part that is used to obtain the ossocollo), for the boiled mixture, in the dish are bacon, legs, rind, ribs, head, tongue and smoked carob. The type of sausages used are the sausages of Vienna (Wurstel), Crangno (typical Slovenian sausage), cotechino. The meat is cooked in "Caldaia", and soaked in a broth, which is constantly renewed and kept warm.
