Blueberry sorbet with buttermilk

Ingredients

350 g of blueberries,

125 g of sugar,

250 g of buttermilk,

the juice of 1 lemon,

1 light egg.

Introduction

Although it is generally called small fruit, it is more correct to define blueberry a berry. Acidulous and slightly astringent due to the presence of tannin, it is rich in anthocyanic pigments that give it the characteristic color and that in the popular pharmacopoeia are considered a beneficial aid and a protection for the sight.
