Bussolai

Difficulty: Medium Doses: for 4 people
Ingredients

1 kg of 00-type flour,

200 g of sugar,

150 g of butter,

the grated peel of 1 lemon,

50 g brewer’s yeast,

½ glass of dry white wine,

salt.

Introduction

The Bussolai, of Venetian origin and later Istrian and Triestine, were prepared for the festivities and in particular for Confirmation. "Chi ga santoli ga buzzolai" (who has godparents, has bussolai), says in fact the proverb (the godparents gave their godchildren an abundant garland of these sweets), because we know that: "bezi, bases and bussolai no xe boni se no i xe assai" (Money, kisses and compasses, are not good if they are not many).
