Hazelnut cake

Ingredients

200 g shelled hazelnuts,

3 eggs,

200 g of type 00 flour,

200 g of sugar,

150 g of butter,

1 sachet of baking powder,

1 tablespoon olive oil.

Introduction

Hazelnut (Corylus Avellana) is an ancient fruit, consumed even before oil and wine, thanks to the fact that it grew spontaneously in all hilly areas. Today it is part of the wide range of dried defined fruits. Rich in vegetable oils, it is much utilized in pastry, whole or crushed, as base ingredient or as gasket.
