Friulian rhododendron honey

Description

The Friulian rhododendron honey derives mainly from rhododendron nectar (Rhododendron spp.), or from ferruginous rhododendron and Alpenrose (Rhododendron ferrugineum) and hairy rhododendron (Rhododendron hirsutum).

In the liquid state, the colour of this honey ranges from colourless to pale/straw yellow, while in the crystallised state its colour varies from white to light beige. Crystallisation occurs spontaneously, more or less rapidly, as the nectar is rich in sucrose; a compact mass with thin crystals can be formed, or a pasty one with large crystals. The aroma is not too intense, delicate and slightly fruity; the taste is normally sweet, mild, and not very persistent. Sometimes, its aroma and flavour are more intense and richer due to the presence of other components - such as raspberry nectar - which provide distinct floral and fruity tones.
