Roasted duck in orange juice

1 previously cleaned duck weighing approximately 1 kg and 200 g,

1 coast of celery,

1 onion,

1 small apple,

1 large untreated orange and the peel of 2 oranges,

1 glass of red wine,

50 g of butter,




1 tablespoon chopped parsley,




The roast duck is in Friuli the typical dish of San Martino. Here the recipe, transgressive with respect to tradition, provides it flavored with orange juice. Since duck meat is quite fat, experimentation in the kitchen tends to find new elements that blend harmoniously in taste and that make the food more digestible.
