Description

Game meat (today, more often sheep or mutton meat, also mixed with beef) chopped and mixed with a mixture of salt, pepper, wild fennel (“Cren” in local dialect) or other herbs, pressed (or sausageed) and then smoked. The Pitina PGI is externally semi-spherical in shape, between golden yellow and brown- yellow in colour; when cut, the inner colour is between bright red and burgundy with the darkest outer part. The dough is lean with very fine grain. The flavor is savory, with a characteristic aroma of smoke.
