Carbonara with pitina

Difficulty: Easy Doses: for 4 people
Ingredients

400 g of spaghetti,

1 pitina,

50 g of butter,

4 eggs,

2 tablespoons of liquid cream,

120 g seasoned and grated Montasio,

1 glass of Friulano,

salt,

pepper.

Introduction

The game pitina, a typical dish of Pordenone, is prepared today only by the few hunters left on site. Preferably use mutton, goat or pig meat, with the addition of locally harvested herbs, garlic and juniper berries. After the flour is floured with corn flour, it is smoked with non-resinous wood.
