Sauris ham

Sauris IGP ham has a round shape, without any paw, with a uniform walnut-golden skin, with orange shades except for the inner side, which was originally cut. The visible lean part is dark red, outlined white in the visible portion. The consistency is firm and elastic, even in the vertical section of the cut. When cut, the colour is uniform red-pinkish, with the fat parts varying from white to white-pinkish. The scent is delicate and the taste is sweet, with a pleasant smoky note.
