Bread gnocchi with speck

Ingredients

500g of stale bread, 

150g of speck from Sauris

½ Cosa Valley pink onion

1 glass of milk, 

3 tablespoons of flour, 

1 bunch of chopped parsley, 

chives, 

3 eggs, 

salt, 

3 tablespoons of extra virgin olive oil

150g of butter

Introduction

A variant of the bread and tomato sauce gnocchi is the traditional Austrian gnocchi with speck, which came into common use on our tables at the time of the Habsburg Empire. Speck, a cured meat born from the need to preserve pork, finds its land of choice in the Sauris valley.
