Ricotta and red mullet soup

Difficulty: Medium Doses: for 4 people
Ingredients

300 g of ricotta cheese,

10 red mullet (if possible big, rock),

2 ribs of celery,

olive oil,

salt.

Introduction

The ricotta, called "scuete" in Friuli and "puina" in the Giuliana area, is consumed fresh or smoked.  A cheese cannot be defined properly because it is obtained by separating the whey from the curd, by means of a heating process in the boiler and the addition of lactic acid.
