1kg of small fresh fish (anchovies, striped red mullets, baby squid, cuttlefish, cod, prawns),
3 glasses of milk,
300g of durum wheat flour,
1 litre of olive (or peanut) oil for frying,
The “essence” of the recipe is the variety of the fish, some of which (such as anchovies, squid and shrimp), according to tradition, would be mandatory. However, it is clear that the dish allows for the greatest freedom of choice. In Trieste, the frying of “minudaia” is very popular, with very small fish that require almost instant cooking.
