Sea bass in salt

Ingredients

2 sea bass,

2 kg of coarse salt,

2 cloves of garlic,

2 tablespoons chopped parsley,

pepper.

Introduction

The sea bass, with a colour lead back and a silver belly and sides, is one of the most renowned fish. It was already appreciated by the Romans who, as Pliny tells, fished it in the waters of the Tiber where the females went to lay their eggs. Despite being sea fish, sea bass can in fact live also in brackish lagoons and in fresh waters.
