Mackerel in salmoriglio
4 mackerel of a total weight of approximately 800 g,
500 g of red tomato,
4 teaspoons of balsamic vinegar,
4 tablespoons extra virgin olive oil,
The 'salmoriglio', as we read on dictionaries, is a condiment for fish or meat based on oil, water, garlic, lemon, parsley and, sometimes, oregano. Here it tastes mackerel, fish of the great family of the "blue fish", a definition not scientific of species, but rather a denomination of common use, due to the generic colouration.
