Mackerel in stew

800 g of small mackerel,

80 g of butter,

3 tablespoons olive oil,

1 onion,

1 tablespoon chopped parsley,

2 tablespoons of tomato sauce in a bottle,

1 tablespoon of vinegar,




The mackerel, with its unmistakable greenish livery, nourishes preferably of small blue fish. The best specimens are those which, at the time of purchase, have pink reflections on the abdomen. The size of the fish should be chosen in relation to the recipe you want to prepare.
