Lake Cavazzo was once rich in trout, pike and tench. A document of 1212 recalls that the Patriarch granted the investiture "de lacu de Cavâz" on condition that the lord undertook to supply the patriarchal tables of the fish of the lake of the same name. Even then the trout was boiled in water with white wine, onion and aromatic herbs.
