Pork fillet in crust

Difficulty: Medium Doses: for 4 people

1 pork fillet weighing approximately 800 g,

100 g of type 00 flour,

8 slices of rolled bacon,

8 leaves of sage,



4 tablespoons extra virgin olive oil,

150 g pizza dough,

1 egg,

1 potato,

1 glass of white wine.


The crust cooking allows you to achieve a true concentration of flavors. The method essentially consists in enclosing a food in a casing of puff pastry, bread dough or coarse salt, then placing it to cook in the oven. A "evolved" recipe of the most classic preparations of the animal perhaps most loved by Friulian cuisine: pork.
