When we think of summer in terms of food, we think of easy, quick and refreshing recipes. The main ingredient of summer recipes is cucumber! Cucumber (Cucumis Sativus), is a plant that is part of the cucurbitaceae, family to which belong many plants used in our kitchen, such as pumpkin, melon and watermelon! This family of plants has origins in eastern and southern Asia, then spread thanks to trade and easy cultivation, throughout the Mediterranean scrub and in good parts of northern Africa. The fruit of the plant is eaten, from the thick ''skin'' green, oblong shape, slightly acidulous in the flavor of the pulp. The characteristics of this fruit are the very high content of liquids (almost 95% is water), which in fact is the main 'macronutrient'', negligible are the portions of both carbohydrates and proteins, fats and minerals, among the nutrients is distinguished by a good quantity percentage of vitamin K, which can intervene both in coagulation factors and probably also in bone densification processes. Many only the recipes that see it as the protagonist: you can combine with a rice to create a risotto with fresh character (the slight acidity can go to dampen the mantecatura), or combined with other raw vegetables in a yogurt sauce according to the Greek tradition, as a refreshing food to put in a colorful salad with tomatoes and carrots!
Here’s a quick recipe for summer
FRESH CUCUMBER AND SALMON TROUT ROLLS
INGREDIENTS (for 2 people)
300g cucumber, 100g sliced salmon trout, 50g cream cheese or feta cheese or ricotta cheese, the grated peel of half a lemon, the grated peel of half orange, 1 tablespoon of extra virgin olive oil, 100g Carasau/Guttiau bread
Preparation
Peel the cucumbers carefully, rinse the peeler and use it to create slices thin enough and flexible that can be rolled up, put them in a bowl and season with oil. Meanwhile, mix the chosen cheese with the lemon and orange peel, adjusting the salt if necessary, if possible put in a poche sac. Lay the slices on a cutting board, and start layering with a part of salmon trout and a part of the compound with the flavoured cheese. Roll the slices and close them with a snack. Serve with Carasau bread or Guttiau bread
