Description

It has a cylindrical shape with straight sides and flat or slightly convex faces, with a height of about 8cm, an average diameter of 30-33cm and a weight of about 6kg for dairy-type cheese; height of 10cm, diameter of 10-15cm and weight of 1-3kg for caciotta.

The rind takes on a purple colour from dark pomace or bright yellow from white grape; the paste is compact, straw-coloured with sparse or small holes in the dairy type and almost no holes in the caciotta version.

The taste is characteristic, delicate and slightly spicy.
