Pumpkin and walnut 'fregolòz'

Difficulty: Medium Doses: for 4 people

200 g of pumpkin pulp,

150 g of type 00 flour,

½ glass of warm water,

1 egg,

50 g of butter,

50 g of chopped nuts,

100 g grated aged cheese,




Because the mixture is not too moist it is better to dry the pumpkin in a hot oven for a few minutes after boiling it. It is also advisable to choose sun-ripened pumpkins, which compacts the pulp and dries the liquids.
