Aubergines in oil

Difficulty: Easy Doses: for 4 people

½ kg of elongated small aubergines,

750 ml of white wine vinegar,

2 cloves of garlic,

1 liter of olive oil not too tasty,



Aubergines are a vegetable that is well suited for storage both in oil and in vinegar. The fleshy and slightly spicy flesh remains firm and tasty even when invaded. The addition of aromatic herbs and garlic gives pleasant taste characteristics. Check that the oil level is always sufficient to cover them.
