Omelette with the cheese

8 eggs,

100 g fresh Montasio or Latteria cheese ,

60 g of butter,

salt and pepper.


The dough of the Friulian omelet is made of eggs, but does not include the addition of water, milk, flour. The eggs (yolk and egg white are used) are whipped for a long time with a fork; they are cooked in butter or oil (once used lard or goose fat as a dressing).
