Loin of pig with shallot

Difficulty: Medium Doses: for 4 people
Ingredients

1 carré of pig weighing approximately 1,2 kg,

2 small shallots,

2 tablespoons chopped herbs (sage, rosemary, chives),

80 g of butter,

2 tablespoons of vinegar,

1 teaspoon of sugar,

salt,

pepper,

3 glasses of white wine.

Introduction

Shallot is a herbaceous plant whose bulbs are used. It has characteristics similar to the onion, or rather it is found halfway between the onion and the garlic, with the particularity of being much more digestible than the two cousins vegetables and therefore being increasingly used in many dishes. Here it goes with the delicacy of the suckling pig.
