Chicory salad

Ingredients

400/500 g young chicory,

4 eggs,

extra virgin olive oil,

vinegar,

salt,

pepper.

Introduction

The chicory is a herbaceous plant that grows also in spontaneous form and whose stem can reach a metre of height. Chicory, rich in beneficial virtues and with strong diuretic and detoxifying properties, is consumed for the leaves in salads (boiled the largest, even raw the smallest and freshest) and the roots as a substitute for coffee.
