Radicchio canarino

This radicchio is an ecotype of Cicorium Inthybus of the sativa subspecies, selected over the years by the farmers of various areas of the Gorizia area.

The colour of the finished product is canary yellow, with variegations and shades of pink and red depending on the type of selection made by the various local families; the optimal shape is that of a rose.
