Red radicchio in oil
1 kg of radicchio Rosa di Gorizia or Rosa dell'Isonzo (choose preferably very small tufts),
1 litre of white wine vinegar,
1 litre of white wine,
10 leaves of laurel,
10 kernels of walnuts,
salt,
pepper.
Red radicchio is one of the vegetables that are most often preserved in oil as a vegetable typical of regions with a colder climate. Also in this case the cleaning will have to be absolutely rigorous in order to avoid that particles of earth still present in the leaves end up in the pot causing the initiation of toxic processes.
