Spinach and chard omelette

250 g fresh spinach,
250 g of beet,
200 g of fresh Montasio or Fagagna,
50 g of aged Montasio or Fagagna,
1 clove of garlic,
3 tablespoons extra virgin olive oil,
The omelette with spinach and chard is one of the typical dishes of Friuli; for some it is the elaboration of the simplest "frita di prât", that ancient and tasty dish in whose composition enter all the spontaneous herbs that can be collected in the meadow and that today is proposed by the chefs most attentive to the recovery of the products of the territory.
